New business teams up with Glaze Donut shop

Dough-chii Mochi, a pop-up shop that makes and sells a rice-based mochi donut, has teamed up with Glaze Donuts at 1578 Whitmore Ave, Suite H for a complimentary arrangement. Samples of the product were offered Friday when the Ceres Chamber of Commerce held a welcoming ribbon cutting ceremony.

Hellen Vath and Zack Inthavong have made full circle as they were the original owners of Glaze Donuts and later sold it. The pandemic forced them to undertake a different tact, with the development of the unique pastry which was perfected by neighbors Randy and Kelly Cerny who sampled the goodies and provided the feedback. They first opened Dough-Chii in a Salida donut shop owned by Hellen’s aunt, and decided since they live in Ceres to return to Ceres in a unique business arrangement.

While Glaze Donuts is selling regular donuts seven days a week, Dough-chii Mochi only makes and sells its products Fridays, Saturdays and Sundays because the couple has regular jobs in the corporate world. Since the two businesses share the same kitchen, conflicts are avoided by Glaze Donuts making their batches in the morning and Dough-chii Mochi coming in at 12 noon to 6 p.m. three days a week.

“It’s a win-win situation for both of us,” he said.

Inthavong said the pastry has a chewy texture and made of mochiko flour (a Japanese glutinous short-grain rice flour), tapioca starch, and other ingredients like sugar. They are made in a bubble ring shape and are drizzled with some tasty flavors. The business develops a variety of flavors that change from day to day. Some of the 50-plus flavors include Oreo cookie butter, strawberry fruity pebbles, chocolate brownie, mango crisp, vanilla bean frappe, cinnamon bun, zesty lemon bar and ube churros.

“Every day it’s six new flavors,” said Inthavong.

The business also sells the milk tea drinks called boba. The drink originated in Taiwan in the early 1980s and is typically made with flavored tea and chewy tapioca pearls. It is often topped with traditional ingredients like red beans, aloe vera and grass jelly.
